Smoked Candy Salmon

Equipment

  • 1 Smoker
  • 1 Container for marinating salmon
  • 1 Set of Drying racks
  • 1 Hand Whisk or Eletronic Whisk (blends better)
  • 1 Package Apple Wood Chips & Chunks

Ingredients
  

  • 1 Fresh Salmon Filet
  • 1/4 Cup Glastenview Maple Farm Syrup - Smoked jalepno infused vermont maple syrup

The Brine

  • 1 Cup Cold Water
  • 1 Cup Brown Sugar
  • 1/3 Cup Kosher Coarse Salt

Instructions
 

Day 1

  • Make the Brine. Combine 1 cup of brown sugar, 1 cup of cold water, 1/3 Cup Kosher Salt. Whisk together until well blended. I used a Cruisin Art Electronic Hand Blender. Rule of thumb, 1 filet for each brine mixture.
  • Rinse salmon in cold water and place in a container/dish and pour brine over salmon until covered. If Salmon is exposed, flip over so the skin side is up. Note salmon may float. Cover with lid or plastic wrap and place in refrigerator overnight.

Day 2

  • Remove the salmon from the refrigerator, drain the brine and rinse each piece of salmon in cold water again. Place salmon on drying rack and place back in the refrigerator leave on the counter in a cool place) for another 4-8hours,until pellicle forms on salmon (aka shiny stickiness to the salmon surface)
  • Fire up smoker. I used Apple Wood Chips and Chunks. Once the inital blue smoke has turned white, smoker is ready.
  • Brush a layer of maple syrup on the salmon. Place salmon in the smoker. Smoke for approximately 2 hours at 180℉. basting every 30 minutes.
  • Remove from smoker and enjoy!

A few years ago on a vacation trip to Vermont, we visited Glastenview Maple Farms where we got a tour of the maple farm as well as how they make the maple syrup. After trying some samples, we bought a bunch of flavors and have been trying different flavors when we make this recipe. So far the Jalapeno infused tastes really good with the salmon. you get a hint of Jalapeno-infused flavor with little to no spiciness. Another good flavor is their bourbon barrel-flavored maple syrup. We learned that we can order syrup online and they will ship it to our house.
